Christmas Melt-In-The-Middle Chocolate Cookies With Creamy Philadelphia and Oreo Crumb Stuffing

METHOD

Cream butter, and sugars until light and fluffy.

Add the egg and then melted chocolate.

In a separate bowl add flour, cornflour, bicarbonate of soda, cocoa powder, and coffee and mix to remove lumps with an electric mixer. Put the cookie dough in the fridge for at least 2 hours.

Make the melting middle: add white chocolate and Philadelphia, melt over a bain-marie. Mix through Oreo pieces and add to piping bag and chill. Once firm pipe 9g dots and freeze.

Remove the cookie dough from fridge and separate into 8 balls, pipe in the melting middle into the cookie dough. Add to a baking tray and sprinkle over flaky salt. Bake at 170°c fan for 15 mins. Allow to fully cool before serving.

- Cookies:
- 75 g unsalted butter, softened
- 100 g dark brown soft sugar
- 25 g caster sugar
- 1 egg
- 50 g dark Bournville buttons, melted in the microwave or over a bain-marie
- 110 g plain flour
- 20 g cornflour
- 30 g Bournville Cocoa Powder
- 0.5 tsp bicarbonate of soda
- 0.5 tsp instant coffee - espresso powder
- 0.5 tsp flaky salt
- Melt in the middle:
- 100 g Cadbury White Chocolate
- 50 g Philadelphia Original
- 12 g OREO Small Crushed Cookie Pieces
